Topped with pickled red onion, lime, roasted peanuts for some acid and additional nuttiness. Recipe is definitely a keeper, but needs more spice next time!

I have never thought of adding pickled onions but I will next time! It sounds like the perfect way to add acidity.
They were a really nice contrast to the richness of the stew. I’m kind of loving putting them on everything these days, though!
Woah this looks amazing! Thanks for sharing with us. How did you spice this? I would typically use fresh ground guajillo peppers, cumin, coriander, oregano, smoked paprika with salt, pepper for something like this but I do that for most things LOL
Yum, that sounds like a great spice profile! This batch has cumin, red pepper flakes, garlic chili paste, ginger, onion/garlic, salt/pepper. I think it’s missing a little something, so I’m going to try some modifications next time. Smoked paprika sounds like it would be a nice addition!
Would cinnamon make a difference?
I love adding a little cinnamon or garam masala to stews like this. Garam Masala translates to warming spice and contains a lot of cinnamon which is also warming. Love it!
